Yields 10 people
To make the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g fine sugar
To make the Cocktail (produces 850ml, enough for 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Instructions
For the Cordial: Place the listed ingredients in a saucepan, heat until it reaches a gentle boil, mixing to dissolve. After that, remove from the stove and let it to cool down entirely. Transfer into an sealable bottle, seal keeping it in the refrigerator, it will last for about a month.
Preparing the Batch Mix: Combine every spirits and syrup in a big jug, leave to sit for 60 minutes, then strain preferably using muslin, so it's completely strained.
For serving: Add 85ml of your batch mix to a stirring glass packed with ice, and stir lightly for about 60 seconds until cold. Filter into a chilled martini glass or a similar vessel, top with the cranberries adding the final touch by giving it a quick spritz of the essential oil above the glass.
